
Food waste is one of my biggest pet peeves. Whenever I go to the grocery store I make sure I purchase foods that I know I will be making sometime soon so that they don’t go to waste. I usually purchase a large bag or box of mixed greens (kale, spinach, arugula, etc.) to boost my meals with nutrition but sometimes I end up dining out more than usual or I forget about that beautiful bag of salad greens. It’s hard to not get sad when I see produce in my fridge go bad. Pasta & Casseroles: Boost your favorite pasta dish or casserole with a few handfuls of greens. Chop mixed greens and add it to spaghetti or your favorite casserole at the very end while it’s simmering. The greens will cook quickly and soak up the flavor of your favorite pasta dish.
Power Up Smoothie: Smoothies are a great way to get a variety of nutrients into your diet. Level up your smoothie with a handful or two of mixed greens.
