Jump on Board the Cauliflower Craze

Every year there seems to be a food staple that swoops in and takes the nutrition world by storm. For instance, 2016 was the year of kale and 2015 was the year of chia seeds. More recently, cauliflower has caught on, with people using it in everything from “rice” to pizza dough to mashing it like a potato! Before we dive into one more unusual way to use it, let’s talk about the health benefits.

It contains antioxidants. Cauliflower is loaded with protective antioxidants that help reduce the risk of cancer.

It’s high in fiber. Fiber is great for the digestive system and helps fill you up!

It contains vitamin C, which can help strengthen the immune system and prevent infections.

Cauliflower can be especially beneficial for people with diabetes, as it can be substituted in many of the foods — rice, pizza crust, potatoes — that they are often told to limit. Cauliflower can help those individuals enjoy these foods and not feel overwhelmed with carbohydrate counting.

Lately, I have been playing around with using cauliflower and here’s a great recipe that uses it as an Alfredo sauce! Jump on Board the Cauliflower Craze -

Cauliflower Alfredo Sauce

Serves 4


  • 1 head cauliflower
  • 1 cup milk
  • 1 tablespoon chopped garlic
  • ½ cup Parmesan cheese
  • 1 teaspoon black pepper


  1. Wash and chop cauliflower into quarters and place into medium-sized pot. Fill the pot with enough water to cover cauliflower and bring to a boil over high heat.
  2. Cook until tender, about 10 to 15 minutes.
  3. Drain cooked cauliflower and place into blender.
  4. Add milk and garlic and blend until smooth.
  5. Finish by stirring in Parmesan cheese and black pepper to taste.
  6. Serve over your favorite pasta and enjoy!
