Baked Vanilla Pistachio Doughnuts

Makes about 9 to 10 doughnuts


  • 1 cup all-purpose flour
  • ⅓ cup granulated sugar
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 egg
  • ½ cup vanilla Greek yogurt
  • 4 tablespoons melted unsalted butter
  • 1 teaspoon vanilla extract

For icing:

  • 1 cup powdered sugar
  • 2 tablespoons reduced fat milk
  • 1 teaspoon vanilla extract


  • ½ cup finely chopped pistachios


  1. Preheat oven to 350°F. Lightly oil a doughnut baking pan with non-stick cooking spray.
  2. In a medium bowl, stir together flour, sugar, baking soda, baking powder and sea salt. In a separate medium bowl, whisk together egg, yogurt, melted butter and vanilla extract.
  3. Stir wet and dry ingredients together. Avoid over-stirring. The batter will be thick and sticky.
  4. Place batter in plastic piping or bag and fill each doughnut cavity with batter to about ¾ full.
  5. Bake doughnuts for 10 to 12 minutes or until a toothpick comes out clean. Let cool for 5 minutes.
  6. To make the glaze, combine powdered sugar, vanilla extract and milk in a small bowl with a fork or small whisk.
  7. Drizzle vanilla glaze over each doughnut, top with chopped pistachios and serve. Bon appetite!
